Let’s TACO bout Cinco de Mayo

Happy Cinco de Mayo, which turns out, is NOT Mexico’s Independence Day, rather it’s a holiday/excuse for binging on chips & guac, being hungover at work on Seis de Mayo, and spending too much time thinking up bad taco puns (see above)! I love holidays that we totally ignore the real purpose of and instead focus on the finer things in life – the food and drinks. Holidays like 4th of July, Thanksgiving, or most Jewish holidays. One of my favorite sayings accurately sums up about 99% of all Jewish holidays:

They tried to kill us, we won, LETS EAT! –-Ye Old Jewish Wives

On that note, I have a recipe that I LOVE that my mom always used to make for my family while I was growing up. It’s super easy, super delish, and goes very well with margaritas (which my mom did NOT make for the family while I was growing up).


Chicken Taco Casserole


  • 1 pound ground chicken
  • 1 onion
  • a few cloves of garlic
  • 1 small green pepper
  • 1 small tomato
  • 1 cup water
  • 1 jar of taco sauce (whatever spiciness you like)
  • 1 small can diced green chiles
  • 1 can black olives
  • 1 package taco seasoning
  • 1 package of 12 taco shells
  • 2 cups shredded cheddar cheese


Preheat oven to 375°F.

In large pan, cook ground chicken, onion, garlic, green peppers, and tomato until the chicken is no longer pink. Add the water, taco sauce, green chiles, olives, and taco seasoning. Continue to cook for a few minutes.

Spray a baking dish. Crunch up 6 of the taco shells and add to dish. Cover the taco shells with half of the meat mixture, then layer on half of the cheese. Crunch up the other 6 taco shells and layer this on top, followed by the remaining meat mixture and remaining cheese. Bake in the oven for 20-25 minutes.


A Few Things to Note:

  • This is a delicious comfort food that EVERYONE will love, I dare you to find someone who doesn’t.
  • When I’m trying to be healthier (definitely not Cinco de Mayo), I use about half of the amount of cheese (don’t worry, its still delish), and throw way more vegetables in along with the green peppers and tomatoes.
  • You can adjust to your preferred level of spiciness by using the hot variety of taco sauce or adding jalepenos.
